I have had a crazy busy schedule this school year so far with school, work, and this blog. But, working out and healthy eating is still a priority on my to-do list. Protein bars are one of my favorite healthy snacks – but they can sometimes be expensive. These chocolate almond bars are a great (and yummy) way to enjoy healthy eating!

Easy Almond Chocolate Chia Bars

These almond chocolate chia bars are packed with so much yummy-goodness!

  • 1 cup of oats
  • 1/2 cup chia seeds
  • 1/4 cup unsweetened, shredded coconut + 2 tbsp for topping
  • 3 tbsp raw cacao powder
  • 1/2 cup almond butter
  • 1/4 cup raw honey
  • 1/2 tsp. almond extract
  • 1 tbsp. maple syrup
  • 2 tbsp. almond milk

Create these easy, healthy, no-bake almond chocolate chia bars! There is also a protein option for an extra boost of energy.
In a large bowl, add the oats, chia seeds, coconut, and cacao powder. Mix them up!
In a small bowl, heat the honey and almond butter together. Mix in the syrup and almond extract until everything is combined.

Pour the wet ingredients into the dry ingredients. Mix it all together! Once everything is mostly coated, add in the almond milk and mix it until the whole batch is looking and feeling sticky.

Don’t worry – It may take a few minutes – so don’t be afraid to mix it well! 🙂

Line an 8×4 pan with parchment paper and place the mixture into the pan. Using a second piece of paper press the mixture down evenly into the pan.

Sprinkle the coconut over the mix and use a silicone spatula to press it into the mixture.

Stick them in the freezer and freeze it for about an hour. After that, take them out, cut into bars, and enjoy! Enjoy them as a healthy snack, or before or after a workout.
